Healthy Mashed Potatoes Recipe

Most Thanksgiving mashed potatoes call for loads of salt and butter. This heart healthy dish preserves that classic, creamy flavor without the added fat and sodium.

Diabetic Recipe - Heart Healthy Recipe - Gluten Free Recipe

Yield: 6 servings

Healthy Mashed Potatoes

  • 1-1/2 pounds Yukon Gold potatoes, quartered
  • 2 large carrots, peeled
  • 2 Tbsp margarine
  • 1/4 cup 2% milk
  • 1/2 tsp salt
  • 1/4 cup fat free sour cream*
  • freshly ground black pepper
  • Thoroughly wash potatoes and add to large pot. Add water to cover and bring to a boil. Reduce heat and simmer, covered, for about 15-20 minutes. Add carrots and simmer for 5 more minutes, until vegetables are tender. Drain.

    Melt margarine over medium heat and add milk and salt.

    Place vegetables in a large mixing bowl and add milk mixture. Beat with a hand mixer and add sour cream. (Be careful not to overbeat as potatoes will become gluey.) Add freshly ground black pepper to taste.

    *For Gluten Free: Check label to be sure this product does not use a wheat-based starch.
