Diabetic Recipe - Heart Healthy Recipe - Gluten Free RecipeYield: 6 servings 1-1/2 pounds Yukon Gold potatoes, quartered
2 large carrots, peeled
2 Tbsp margarine
1/4 cup 2% milk
1/2 tsp salt
1/4 cup fat free sour cream*
freshly ground black pepperThoroughly wash potatoes and add to large pot. Add water to cover and bring to a boil. Reduce heat and simmer, covered, for about 15-20 minutes. Add carrots and simmer for 5 more minutes, until vegetables are tender. Drain.
Melt margarine over medium heat and add milk and salt.
Place vegetables in a large mixing bowl and add milk mixture. Beat with a hand mixer and add sour cream. (Be careful not to overbeat as potatoes will become gluey.) Add freshly ground black pepper to taste.
